Gajar Halwa – Carrot Pudding
Grated carrot simmered with condensed milk, cardamom powder almonds and pistachio

| 500 gm | Carrot (Grated) |
| 200 gm | Sugar |
| 250 ml | Milk |
| 100 gm | Khoya (grated) |
| 100 gm | Ghee |
| 5 nos. | Green cardamom powder |
| 10 gm nos. | Sliced pistachio |
| 10 gm | Sliced almonds |
| 1 no | Orange zest |
Method :
- Securely tie green cardamom, black cardamom, cinnamon stick, bay leaves,
nutmeg, crushed ginger and garlic in the muslin to prepare bouquet garni.
- Wash chick peas and soak with bouquet garni for 6 hours.
- In a heavy-bottom pan\brad pan, boil soaked chick peas with salt till well cooked.
- Sprinkle powdered masala over boiled chick peas.
- In a separate pan heat oil till it starts smoking
- Add cumin and carom seeds.
- Pour this tempering over the chick peas. Cover and allow the tempering to settle for 4 to 6 minutes
- Stir well and serve hot garnished with tomato julienne and chopped coriander.
