Gajar Halwa – Carrot Pudding
Grated carrot simmered with condensed milk, cardamom powder almonds and pistachio

Qty.Ingredients
500 gmCarrot (Grated)
200 gmSugar
250 mlMilk
100 gmKhoya (grated)
100 gmGhee
5 nos.Green cardamom powder
10 gm nos.Sliced pistachio
10 gmSliced almonds
1 noOrange zest

Method :
  1. Securely tie green cardamom, black cardamom, cinnamon stick, bay leaves,
    nutmeg, crushed ginger and garlic in the muslin to prepare bouquet garni.
  2. Wash chick peas and soak with bouquet garni for 6 hours.
  3. In a heavy-bottom pan\brad pan, boil soaked chick peas with salt till well cooked.
  4. Sprinkle powdered masala over boiled chick peas.
  5. In a separate pan heat oil till it starts smoking
  6. Add cumin and carom seeds.
  7. Pour this tempering over the chick peas. Cover and allow the tempering to settle for 4 to 6 minutes
  8. Stir well and serve hot garnished with tomato julienne and chopped coriander.
