Roasted Almond Confection
Badaam ka halwa
Almonds (badaam),
Roasted, peeled 1 ½ cups
Milk 2 ½ cups
Sugar 10 tbsp
Ghee 4 tbsp
Green cardamom (choti elaichi)
Seeds 1 ½ gm
Saffron (kesar) 1 tsp
Pistachios (pista), shelled, sliced 12
Method :
Bring the milk to the boil on medium heat. Reduce heat to low and continue to stir and cook until milk reduce to half its original quantity. Add the sugar and continue to stir and cook until the mixture is reduced to half. Remove from heat.
Heat the ghee in a wok on medium heat. Add the almonds add stir and roast until light golden. Add the milk mixture, green cardamom seeds, and saffron and continue to cook until the moisture dries completely.
Transfer to a bowl and serve hot garnished with pistachios.
