Coconut & Drumstick Soup
Nariyal our saijan ki phalli ka shorba
Drumsticks (saijan ki phalli)
Stringed, cut into 1" pieces 2
Coconut (nariyal) oil 4 tbsp
Garlic (lasan) cloves, finely chopped 10
Dry red chillies (sookhi lal mirch) 2
Black mustard seeds (rai) 1 tsp
Curry leaves (kari patta) 24
Green chillies, finely chopped 2
Ginger (adrak), finely chopped 1 tsp
Onions, medium-sized, thinly sliced 2
Turmeric (haldi) powder 1 tsp
Tomatoes, thinly sliced 2
Salt to taste
Coconut milk powder, mixed with
2 cup of hot water 2 cups
Lemon (nimbu) juice 1 tbsp
Method :
Boil the drumstick in salted water, drain and reserve drumsticks. Heat the coconut oil in a pan on medium heat; add garlic and sauté until it just starts to change colour. Add dry red chillies, mustard seeds, and curry leaves; stir. Add green chillies and ginger; stir. Add onions and sauté for a minute until they turn glossy. Add turmeric powder and 1-2 tbsp water; saute for a minute. Add drumsticks, tomatoes, and salt gently simmer for a minute. Add coconut, milk increase heat and bring to the boil. Reduce heat and simmer stirring gently for 2-3 minutes. Add lemon juice. Transfer to individual soup bowls and serve garnished with fried curry leaves.
